I have a project to build a group of niche paid classifieds listings sites.

From my research so far, Joomla and K2 (with sh404SEF) would be ideal to build the core sites but I can't figure out how to add a payment function (PayPal and Stripe) for customers to pay for their listings.

I've looked through the Joomla extensions for K2 and have found a membership / subscription and a couple of store extensions but can't find anything directly related to what I need.

I've not used Joomla before but happy to invest time to get up to speed providing I can get it do what I want.

Any help or suggestions would be most appreciated.

I think you should look into a vertical solution like K2Store or J2Store.
