Hello there!

I want to ask if at this point is safe to update to Joomla 3.7.2. with Κ2 2.7.1.

Or is better to wait for K2 2.8?

3.6.5 is safe (3.7.0 contains security issues).
You can update to 3.7.2 safely but you might need to install the DEV version, although most issues have been resolved.
