I know there's another thread on this subject but that wasn't resolved and I wanted to flag this issue up. We have a site where when creating a new K2 item and clearing the Creation Date field stores the date as 30/11/-0001 - 00:00. Saving that item results in the following error:

DateTime::__construct(): Failed to parse time string (-1-11-30 00:00:00) at position 5 (-): Double timezone specification

Server, site and user timezones are set to UTC.

I've tried this with different users with no difference.

Any suggestions?

Looked at it. Are you suggesting using the dev code on a production site? Is this stable?
