soo... my questions are.. can i add a contact form to every user profile? is there a posibility to show a list of all users? how can i add custom fields or how can id edit the plugin for extra fields?

Try overriding user.php and adding form code that you want or try adding a plugin to user.php if you are using a form generator like rsforms.

Try mod_k2tools in author list mode

Create extra fields group - create extra fields - assign that group to the cagegory you want to display the custom fields in

i know this module but i mean more a page with filter and a list

and i mean extra fields by the user profile... like phone number and so on... or how can i delete/hide fields in the extra field plugin?
