You will need to create a new K2 sub template and assign it to that category. Then you can change the Read more language string to something else.

An easy solution is to use the NoNumber ReReplacer plugin to change the "Read More" HTML (text & link) for each respective category.

I encourage you to be creative and scientific...you can try utilizing a catching a Call-to-Action and analyze the click-through rates, for example:

Also, remember you are change the HTML, that includes the text, the link (anchor, tracking code, etc), you can use font icons or even images.
