Where to change the label near the rating? The inscription in brackets the number of votes after the stars?

If you want to change its text you can use language overrides
docs.joomla.org/J3.x:Language_Overrides_in_Joomla
The string is: K2_RATE_THIS_ITEM

You need to add them yourself in the language overrides section. The link I sent you describes the process.
