Firstly, thank you for your advice, effort and thoughts on this.

I haven't tried disabling other modules/components/plugins to see if it resolves the issue.

But I've decided to follow an alternative route - our K2 Items will simply be moved to Joomla Articles. This resolves our issue in regard to spam, and to the issue of the 500 server error.

We have already done the above.
