I would like to create a job listing section on a site using K2 with the ability for candidates to upload their resume via the job listing. Is there an extension for K2 that will allow me to add uploading to a K2 item?

Just a thought. If you are creating a job listing site, you will probably be charging the employers for listing the job openings.
Why collect all the resume's on the site, why not just create an extra field with an email link to the employer and let the users email and attach the resume?
if you want the employers to log in to get the resumes thats another story.

It is for a single company to list jobs in their company.

Ok, I dont know of an extension like that. You could create a category for the new job, use the category desc, and allow users to post k2 items with attachments from the front end.
Another probably better approach would be to put a php script or extension like this in the k2 item for the job and collect files
