now this template use mainly k2

in the page prodotti i have a menu with the products shown, but when i click on product and jump on product page the "div.itemListSubCategories" disappears. How can fix this?

By default the subcategories list is not rendered inside the K2 item.
You will need to add a module position that is visible only inside items and then publish a K2 content or K2 Tools module.

No, no need to hack the core, all this can be done inside the index.php of your template.
