Change the relevant setting for that category (check the category settings) and if these settings are not defined, check the global image size settings in K2's component settings.

You will have to re-upload your images so they are properly re-resized. Or use this PHP script github.com/getk2/rebuildK2imageCache to resize them all from the source image (just make sure you read the script's settings before running it).
