 I am working on a website that is using Joomla and K2. I have a situation where I need to edit an email address that appears in all items under a category in an extra field. The HTML is actually:
value="example@"
I could do this manually but it would take forever as there are probably about 100+ entries where this email (which I have access to) to change an email address that appears in a field within a category in K2/

Do it the easy way: use something like regularlabs.com/dbreplacer to search/replace for that string in your database.
