As long as these custom fields support "content plugin" rendering, then yes. It may be an option to toggle though. In any case, make sure to ask this question in the VM forum as it related to "content plugin" rendering and it's not specific to AllVideos.

As a sidenote, even if VM does not support content plugin rendering, as long as you can get the output of these fields in some override, you can always use the method described here docs.joomla.org/Triggering_content_plugins_in_your_extension to trigger content plugins on your own.
