Very interested in moving to the Radio Wave template from a Wordpress site.

Can I use an audio stream from an existing Shoutcast/Centovacast URL rather than 'radiojar' service?

Yes you can use a player based on JPlayer. A Joomla! module's link is available in the template's documentation.
