It used to be really easy on 1.0, just edit the php file in ./components/com_k2/views/*/tmpl
I can't find the files to edit anymore if I want to edit a template. I also tried searching the DB for relevant search phrases and turned up nothing.

In particular, I want to make subcategory titles part of the link on itemlist category view, so I don't have to have an image when I'm 3,4 levels down from the root.
