In K2 Parameters under the Content > RSS Feeds section, we set Item Video and Item Gallery to show, but we still don't see these in our RSS feed when pulled through MailChimp. The AllVideos plugin code is in the newsletter's source code, but the crucial iframe code is missing. And the gallery code shows up as plain text with brackets (ex: {gallery}426{gallery}).

Is there anything we can do to have these pieces of media show up in MailChimp?

Have you setup the K2 parameters correctly regarding feeds? Note that these settings there apply to the videos and galleries uploaded using the K2 "Video" and "gallery" tabs of K2 item form.
