Can I override the k2 edit item in the administrator panel? Which file should I copy where?

Hi. Yes you can. Try to copy /administrator/components/com_k2/views/item/tmpl/default.php to /administrator/templates/isis/html/com_k2/item/default.php. Note that i assumed that you are using Joomla! 3.2 with it's default admin template. If that's not the case replace "isis" with your admin template in the path i provided.
