This seems like an easy task, but I have installed the Danish language pack, changed the K2_READ_MORE constant in the English and the Danish language .ini files AND created an override in Language Manager.

How come the SOB is still in English?

It should say "Læs mere ..."

Make sure it is not hardcoded in your template.
Open the category-item.php file and look for that language string.
