I need to create some 360 items under a category. Is there anyway you can write some MySQL to generate these items?

I would not do this since, there are a lot of dependencies that change from database to database.
If you have them on a .csv or as Joomla! articles you can import them to K2.
The csv method requires an additional extension.

Wouldn't recommend it. One error and you might lose hours hours of your time.
