I have tried putting an umbrella category for this, but the newsletter will say "no recent articles" The RSS link only provides a link to the home page of the website.
Here are the RSS links I have tried, I just can't find how to do this and need help.
employmentlawweekly.com/index.php? option=com_content&view=category&id=4&format=feed&type=rss
employmentlawweekly.com/index.php?format=feed&type=rss

Just add ?format=feed&type=rss as a suffix to that URL.

Are K2 items able to be an RSS feed? I need the items (articles) to be fed into a newsletter

K2 uses Joomla!'s feed functionality so the method to get a feed is completely the same.

They produce the feed of the current menu item. This is not specific K2 functionality.
Take a look at these links
domain.com/k2-menu-item/?format=feed or,
domain.com/inde.php?MENU_ITEM_URL&format=feed
www.joomlaworks.net/blog?format=feed

I think there is something I am really missing and need help to make it work.
Look @ this page, see how it only shows home and not a newsfeed?
employmentlawweekly.com/inde.php?MENU_ITEM_URL&format=feed
The issue is, I didn't build the site and am trying to figure out what happened, maybe there is something I am missing in the back end.
All I know is if it just says "Home" on the feed, this will not work for how we need the newsletter.
Sorry for all the back and forth, I am just trying to get this fixed once and for all.

If your menu item (as home) contains only modules then nothing will show in the feeds.
You need a menu item which is of the K2 Categories type and holds content.

That clarifies it a bit more.
The articles on the website are created as Items... If I create a parent category for them and make that it's own page, but a hidden menu item - that should work?

This is how Joomla! works, you can look at Joomla!'s docs on how Joomla! generates its feeds.
I have given you example URLs, you need to populate your own based on these. All you need is to pretty much a suffix to the (component's) menu item you need.
