I do not want to click "Change the Author" at creation/editing material. How can I set the author by default?

The author is set via who ever is logged in and creating the article/item.
If you want to change the author you will have to write a fictitious alias at the point of publishing. Or, edit your username to 'Fred' instead of Superuser in Joomla's User menu.

When you edit another user's item, it's mandatory to change the author manually if you want another user to show as the creator. Can you imagine the hell unleashed if updating a single option totally unrelated to the content in an item triggered a user change? I can't...
